Ho Hum mmm COOKIES??

Yesterday, Shelby and I spent the day cleaning house and running around to the store and such. The boys were off with Dad working so it was just the two of us. After we got back, Shelby wanted to make something special for her Daddy to come home to(well, maybe the boys too!)So she made Natchez Cookies. My mom found this recipe in a Bon Appetite magazine and it originally called for chopped pecans. My Jon does NOT like nuts in anything so we just left them out. I went ahead and left them in the recipe for simplicities sake. I have also had them with the chips, nuts and coconut sprinkled on top. Really yummy and really easy, my favorite kind of dessert!

Tonight Justin is cooking our meal. He has picked one that does not have a recipe for the main portion, tex mex, and garlic bread pizza bites, and a monster cookie for dessert. He really enjoys cooking, especially on the grill, but this time he said he wanted to try something new.I'll post pictures of his creation tomorrow. Shelby will cook next week, she wants chocolate chip pancakes for dinner...shaped into animals.Umm.. should be interesting.Jaren is making noise about marinated steak on a stick with seasoned potatoes and salad. We'll see.
NATCHEZ COOKIES
1 cup butter/margarine
1 cup Brown sugar
15 whole Graham crackers(about)
Semi sweet chocolate chips
1 cup chopped pecans
Line a 15x9 jelly roll pan with foil, break graham crackers in half so that they are squares, line them side by side into the pan, filling in with quarter crackers where necessary.
Now, Preheat oven to 350 , melt the sugar and butter ON the stove until melted, stirring well. Mix in the pecans, pour over the crackers, and spread with a spoon until all the crackers have some liquid on top. The liquid will sink to the bottom of the pan and that's okay, just try to get some on the tops. Now bake about 10 min or until bubbly on top(looks kind of like foam)
remove from oven, and immediately sprinkle chocolate chips on top. At this time make sure the cookies are still separated, they just slide around. Let cool until the chips reset, cut apart and peel off of the foil.Enjoy!!!
