Do you ever have do-over night? We have leftovers night at least once a week. Usually Sunday night after the evening church service. I just take all the leftovers from the week, put them on the counter with some plates, throw out some raw fruits and vegetables and dinner is served. The kids enjoy it because it is less structured than our usual meals, and they get to pick and choose what they want. within reason. My only request is that they take at least one meat and at least one fruit or vegetable. But they get to pick. An all time favorite for a vegetable is raw carrots and peanut butter. But do-overs are different. We have become fond of grilled london broil. I marinate it for a few days, then grill and serve. We always have about 1/4 to 1/2 left over. Sometimes we eat it on leftover night, sometimes not, To keep it from going to waste i freeze it. It later gets sliced, added to other frozen meats, add some peppers, onions, celery, liquid seasoning of some sort, and voila, stir fried do-overs. Its always different because my marinades and seasonings always change. I have no recipe. I really just toss it in the pot and start throwing stuff in there. To dress up last nights do-overs I surprised Jon with one of his favorites .DIRT PUDDING.When we were dating we worked at Walmart and Fred from sporting goods brought this in, and we fell in love with it. His wife graciously gave us the recipe, and now its as much of a holiday tradition for us as pumpkin pie is for most families. Ive never done a calorie count on it, but its gotta be WAY up there. Whats your favorite dessert? Do ever have do-over night?
